     Healthy Veggie Quiche

Ingredients
1/2 cup All Purpose Flour
3/4 cup of oatmeal
3 Tbl. Butter
1/4 cup 2 percent Milk or Butter Milk
1/2 Zucchinie
1/2 white onion
2 cups of portabella mushrroms
2 garlic cloves
1 tomato
 
5 eggs
2 Tbl. olive oil
salt (to your taste)
pepper(to your taste)
2 1/2 Tbl. pesto
1 cup grated mozzeralla cheese( optional)

Instructions
(Preheat oven to 350 degrees) Begin by combining flower and oatmeal into a food processor. then add cut up cubes of butter into the food processor, then pulse till looks pebbly. While pulsing, add the milk in gradually. Keep food processor going till dough slightly balls up. Take out the dough and roll the dough to fit your 9inch. pie pan. Bake dough for 7 minutes, then take out of the oven and let it cool.
Take your sliced onion, zucchini, mushroom, tomato, and garlic and fry it in olive oil till it slightly wilts. After the vegetables are done sauteing, put them a side to cool
In a separate bowl, combine 5 eggs, salt & Pepper(amounts is up to you) and 2 1/2 Tbl. of pesto and whisk till it's fluffy.
In your 7 min. bakes crust, add the sauteed vegetables and your egg mixture on top. Add mozzarella cheese on top of quiche before putting int the oven. Bake for about 35-45 minutes. Bon Appetit.
