3/4 teaspoon xanthan gum,available near other gluten free items in larger supermarkets
1 1/2 cups buttermilk
1/4 cup melted butter
1 egg
Instructions
Preheat oven to 350 degrees F. Grease 12 standard muffin cups or line with paper baking cups
combine cornmeal,sugar,gluten free baking mix, baking soda,salt,and xanthan gum in a large bowl.
Whisk together buttermilk,butter,and egg in a medium bowl.Add buttermilk mixture to dry ingredients and blend well.Batter will be thick.
Spoon batter intop baking cups,filling almost full.Bake muffins 20 to 25 minutes or until lightly browned and toothpick inderted into center of muffin comes out clean.cool in pan 5 minutes,remove to wire rack.serve warm.
