     Greek Chicken

Ingredients
4 oz feta cheese crumbled
1 Tbsp fresh lemon juice
1 tsp dried oregano
6 skinless boneless chicken breasts
1/4 tsp salt
1/4 tsp ground black pepper
2 Tbsp all purpose flour
2 Tbsp olive oil
1 tsp chicken flavor instant broth
 
1 medium tomato diced
10-12 oz spinach, coarsley chopped
Toasted pita wedges

Instructions
In a small bowl, with a fork, mix the feta lemon juice and oregano until smooth. Pound each chicken breast to 1/2 inch thickness with mallet or rolling pin.
With a knife or spatula spread cheese mixture over each breast half to within 1/2 inch of edge.
Fold each breast in half crosswise and secure with a toothpick.
