1 teaspoon minced fresh rosemary or 1/4 teaspoon dried
1/4 teaspoon dried thyme
Instructions
Sift chickpea flour into medium bowl.Stir in salt and pepper.Gradually whisk in water to create a smooth batter.Stir in 2 tablespoons olive oil.Allow batter to rest at least 30 minutes.
Preheat oven to 450 Degrees F About 10 minutes before you are ready to bake socca.Place 9- or 10-inch cast iron skillet in oven to heat.
Add basil,rosemary,and thyme to batter,whisk until smooth.Carefully remove skillet from oven using oven mitts.Add 2 tablespoons olive oil,stir to coat evenly.immediately pour in batter.
Bake 12 to 15 minutes or until edge begins to pull away and center is firm.Remove skillet,turn oven to broil.
Brush socca with remaining tablespoon of oil and broil 2 to 4 minutes,until dark brown in spots.cut into wedges and serve warm.
