Preheat oven to 350f
Scoop out center of tomato, save pulp.
heat oil in pan, sauté mushroom, onion, pepper, and
garlic for 10 minutes. Add tomato pulp, oregano,
parsley, and cayenne, stir together and cook for 5
minutes
Place tomato shells on oiled backing sheet. stuff
tomatoes and top with cheese. Bake 10 minutes
