4 potatoes, peeled and cut into 1/4 inch thick slices
1/2 cup chopped onion
3/4 cup diced tomatoes
2-3 serrano chiles (to taste), thinly sliced
1 1/2 cups shredded queso Chihuahua or Monterey Jack cheese
Instructions
Heat the oil in a large skillet over medium heat. Add the potatoes and cook, stirring occassionally, until tender, 4-5 minutes. Using a slotted spoon, transfer the potatoes to paper towels to drain for 5 minutes.
Pour off all but 1 tablespoon of oil from the skillet. Set the skillet over medium heat and add the cooked potatoes, onion, tomatoes and chiles. Cook unil the onion is softened, about 3 minutes. Scatter the cheese over the potatoes, remove from the heat and let stand unitl the cheese melts.

Serve these with eggs or refried beans or wrap them up in flour tortillas to make burritos.
