     Super Summer Veggie Blend

Ingredients
3 Tbs water
1 tsp thyme
1tsp dill weekd
1 tsp oregano
1 tsp basil
4 zucchini sliced
3 cloves garlic
2 tomatoe chopped
1 med. red onion
 
1/2 red, yellow and orange bell sliced
2 c shitake, cremini or oyster mushrooms no stems and chopped
1 Tbs arrowroot powder
1 Tbs no salt herb seasoning
1 Tbs black fig vinegar
2 tsp water

Instructions
In large skillet add 3 tbsp water, thyme, dill, oregeno, basil, zucchini, garlic, tomatoes, onion, peppers and mushrooms. Vocer and cook over med/high heat for 8 minutes. Meanwhile mix arrowroot, herb seasoning, vinegar, and 2 tsp water together in small bowl. Add sauce to simmering veggies and cook 4 more minutes or until sauce boils and thickens and veggies are tender, stirring occasionally.
