Heat oven to 400 degrees. Cook chicken on stovetop
on medium heat with some olive oil and cumin til
done about 8 minutes. Using a food processor chop up
onion, peppers, chicken. Add to bowl along with sour
cream.

Mix together and add as much sour cream as needed (I
use a small amount so it's not runny). Grate cheese
in food processor. Add some to the bowl and set
aside some for topping.

Grease a 12X12 pan. Fill tortillas with mixture and
roll up. Place them close together in pan. Top with
salsa and remaining cheese.

|
Place foil over pan and bake for 25 minutes. Serve
alongside spanish rice.

Corn, olives and black beans are a great add in for vegetarians. Also works well with beef.
