     Chicken Enchiladas

Ingredients
Sour cream
Green pepper
Red pepper
Onion
Cheddar cheese
chicken
Salsa
Tortillas
Olive Oil
 
Cumin

Instructions
Heat oven to 400 degrees. Cook chicken on stovetop on medium heat with some olive oil and cumin til done about 8 minutes. Using a food processor chop up onion, peppers, chicken. Add to bowl along with sour cream.
Mix together and add as much sour cream as needed (I use a small amount so it's not runny). Grate cheese in food processor. Add some to the bowl and set aside some for topping.
Grease a 12X12 pan. Fill tortillas with mixture and roll up. Place them close together in pan. Top with salsa and remaining cheese.
Place foil over pan and bake for 25 minutes. Serve alongside spanish rice.
Serving Suggestions
Corn, olives and black beans are a great add in for vegetarians. Also works well with beef.
