     Fettuccine Alfredo

Ingredients
2 tablespoons butter
1 small onion, thinly sliced
4 cups heavy whipping cream
2 tablespoons freshly grated imported Parmesan cheese
2 teaspoons freshly grated nutmeg
1/2 teaspoon salt
1/2 teaspoon pepper
16oz fettuccine
2 tablespoons freshly grated or shredded imported Parmesan cheese
 
Freshly ground pepper

Instructions
Melt butter in 10-inch skilled over medium heat. Cook onion in butter about 5 minutes, stirring frequently, until tender. Stir in whipping cream; 2 tablespoons cheese, 1 teaspoon of the nutmeg, the salt, 1/2 teaspoon pepper. Heat to boiling; reduce heat. Simmer uncovered about 30 minutes, stirring frequently, until thickened.
While sauce is simmering, cook fettuccine as directed on package. Drain fettuccine; return to saucepan. Add cream sauce; toss gently until fettuccine is evenly coated. Sprinkle with 2 tablespoons cheese, remaining 1 teaspoon nutmeg and the pepper.
