     Penne/Pancetta/Vodka pasta

Ingredients
1 16 oz Penne pasta
2 tablespoons Margarine
1/4 pound Pancetta bacon (thinly sliced)
1/3 cup Vodka
1/2 cup Heavy whipping cream (fat free)
1 1/2 cups Tomato sauce
1/2 cup Gratted parmesean cheese
 

Instructions
Chop pancetta
Bring water to boil and cook penne
Meanwhile, melt margarine in large skillet ove med heat. Add pancetta, and sauté until lightly brown. Add vodka and stir until it is reduced by half (about 4-5 min). Stir in tomato sauce and cream. Simmer uncovered for 10 to 12 min. Stir every few min.
Stir in pasta and heat through. Serve with parm cheese.
