2 pounds red potatoes, microwaved til soft
|
|
1/3 c. minced onion
|
|
1/2 pound green beans, boiled tender crisp
|
|
1/2 pound Jarlsberg, diced into 1/2 inch cubes
|
|
1/4 c. olive oil
|
|
2 1/2 T white wine vinegar
|
|
1/2 t. salt (or more to taste)
|
|
1/2 t. pepper
|
|
3 t. stone-ground mustard
|
|
|
|
1/2 t fresh thyme
|
|
2 medium cloves of garlic, minced
|
|

|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Slice potatoes and put in large bowl. Slice beans into 1 inch
lengths and add to bowl. Add Jarlsberg.
|

In small bowl, add onions, olive oil, vinegar, mustard, garlic, salt,
pepper and thyme leaves. Whisk together. Pour over potato
mixture and serve.
