     Buffalo Chicken Salad

Ingredients
2 1/2 tbsp olive oil
4 tsp cayenne pepper sauce
1 1/2 lbs chicken breast
1 1/2 tsp paprika
1 tsp salt
3 lg stalks of celery diced
4 carrots shredded
4 scallions thinly sliced
3/4 cup crumbled blue cheese
 
1/3 cup 1% milk
6 tbsp plain low fat yogurt
1 1/2 tbsp red wine vinegar
6 cups shredded romaine lettuce

Instructions
Preheat broiler. In a med bowl combine 2 tbsp of oil and 1 tbsp hot pepper sauce Add chicken and toss ATransfer the chicken to a broiler pan and sprinkle on both sides with paprika and 1/2 tsp salt Broil 6 inches from the heat turning once for 8-10 min or until cooked through. Place on a plate to cool slightly Cut into small chunks. Dice celery, shred carrots, and cut scallions. Place in lg bowl
In blender combine blue cheese crumbles, milk, yogurt, vinegar, 1/2 tbsp oil, 1 tsp hot sauce, and 1/2 tsp salt. Process until smooth.
Add dressing, chicken and lettuce to bowl with veggies. Toss well to combine
Serve chilled or at room temp
