     Buckaroo Stew

Ingredients
1 lb. ground beef
1 clove garlic, minced
1 tsp. salt
1/4 tsp. pepper
1 large onion, chopped
1 tbls. chili powder (optional)
2 cans (1 lb.) diced tomatoes
1 can (1 lb.) white kidney beans
1 can (1 lb.) red kidney beans
 
1 can (12-16 oz.) whole kernel corn
1 pkg. shredded cheddar cheese

Instructions
Brown grd. beef, garlic, salt, and pepper in lg. dutch oven. Pour off fat.
Stir in rest of ingredients, except cheese. Simmer 15 min. (Can serve at this time) or
Pour into 1 lg. or 2 sm. casseroles. Let cool and freeze. To heat,place in cold oven, set at 350 degrees and bake 2 hrs. or untill bubbly. Serve in soup bowls and sprinkle with cheese.
