Preheat oven to 350F. Line baking sheet with foil, then parchment paper. Arrange matzo on baking sheet, breaking up up as needed to fill spaces leaving no gaps. Bake 10 minutes until golden.
Sprinkle with chocolate chips. Let stand 5 minutes, then spread chocolate over matzo with spatula. Sprinkle with toffee chips and pistachios.
Place in refrigerator 15 minutes, or until set. Break into pieces and store in a tin in the refrigerator.
