     Cheddar Twice Baked Potatoes

Ingredients
6 lg. potatoes
8 Tbsp. butter
1/4 lb sliced bacon, diced
1 med onion, finely chopped
1/2 c. milk
salt and pepper
1 c. shredded cheddar cheese
 

Instructions
wash potatoes and spread with butter. Place on baking sheet. Bake at 350 for hour or tender. Cook bacon. remove to paper towel. In drippings saute onions and set aside. When potatoes are cool enough to handle, cut top off each and scoop out insides.
In bowl with potato add milk, egg, S & P and rest of butter. Then add cheese, bacon and onion. Spoon back into potato skin. Place on baking sheet. Bake at 375 for 20-25 minutes or heated through.
