Clean and soak the beans over night. Drain, cover with cold water. Simmer covered and continue to add water to keep the beans covered. As soon as beans come to a boil, add meats and enough water to cover.
Cook 2-2 1/2 hours. Season with salt
Sautee onions, garlic, and hot pepper in a separate pan an hour before serving. Add 2 cups beans and mash, add 2 cups liquid from the beans. Simmer until it is thickened. Return it to the beans and meat and stir. Continue cooking for 30 mins.
