Preheat oven to 375 degrees. Remove the stems from the mushrooms caps. Finely chop the stems and set aside. Brush the caps with 7 tablespoons of butter, reserving 1 tablespoon.
Arrange the caps on a lightly greased baking sheet. In a small bowl, combine the remaining ingredients, reserving 2 tablespoons of bread crumbs along with the remaining 1 tablespoon of butter.
Fill each mushroom cap with the mixture. Combine the remaining butter and bread crumbs and sprinkle over the stuffed mushrooms. Bake for 15 minutes.
