Grate potatoes and drain well through cheesecloth.

Beat eggs and add to potatoes. Add grated onion, salt, and pepper to taste.

Heat oil in frying pan or electric fry pan until hot. Stir potato batter and drop about ¼ cup of the mixture into the hot oil. Fry on both sides until well browned (about 3 minutes per side).

|
Drain on paper towels.
|

Serve hot with applesauce or sour cream. Make more than you think you need – they go fast!
