Line muffin tins with paper baking cups, place one vanilla wafer in the bottom of each cup. Beat together cream cheese, eggs, sugar and vanilla until creamy and smooth. Add lemon juice and beat until mixed in. Spoon mixture into cups until they are about 1/2 full. bake at 375 for 15 minutes. do not overbake. When cool, spoon a tbsp of pie filling onto each cheese cake. Refrigerate
