     Fresh Salsa

Ingredients
8 med tomatoes, chopped
3/4 cup slice green onions
1/3 cuup finely chopped fresh cilantro or parsley
1/ 3 cup chopped onion
2 small jalapeno peppers, finely chopped (seeded if
desired)
1 can ( 2-1/4 oz) sliced ripe olives, drained
3-1/2 teaspoons fresh lime juice
1 tbls cider vinegar
 
1 tbls vegetable oil
1-2 tsp chili powder
1-2 tsp ground cumin
1 tsp garlic powder
1 tsp dried oregano
1/4 tsp salt

Instructions
Combine all ingredients in a large bowl. Cover and refrigerate overnight.
Diabetic exchanges- one 1/4 cup serving equals a free food; 16 calories, 31 mg sodium, 0 cholesterol, 2 gm carbohydrate, trace protein, 1 gm fat.
