2 Tablespoons unsalted butter, brought up to room temp.
2 tablespoons chopped fresh farm Basil
1/4 teaspoon salt
fresh ground black pepper to taste
Instructions
You can cook your potatoes by steaming or boiling them. If steaming, place potatoes in a steamer rack over a saucepan of boiling water. If boilng your potatoes place in a pot and cover with water. Cook potatoes untill tender, about 20 minutes.
While the potatoes are cooking, chop the basil. Start by tightly rolling up the leaves. Fine chop with a sharp knife
Drain and transfer the hot potatoes to a bowl. Add the butter, basil, and salt. Toss untill all potatoes are coated. Mix both your red and yellow potatoes for variety.
