     Sunday Supper Meatloaf with Roasted Vegetables

Ingredients
Roasted Vegetables-
2 TBS Olive Oil
2 Cloves Garlic
3/4 tsp thyme
1/2 tsp salt
1/4 tsp Black pepper
1 1/2 pounds medium red potatoes, qurtered
1 pound carrots, cut diagonally into 3/4 inch pieces
2 small yellow onion, cut lengthwise into 1/2 inch wedges
 
Meatloaf-
1 1/2 pound lean ground beef or turkey
3/4 cup quick or old-fashoined oats
3/4 cup finely chopped onion, 2 cloves minced garlic
1/2 cup chii sauce or catsup
1 egg, lightly beaten
1 TBS Worcestershire sauce
1 tsp thyme
3/4 tsp salt, 1/2 tsp pepper

Instructions
Heat Oven to 350. Roasted Veggies- Combine oil, garlic, thyme, salt, pepper in large bowl. Add veggies, toss. Spread in even layer in flat baking pan. Set Aside
Meatloaf- Combine all ingredients in same bowl, mixing lightly but throughly. On rack in broiler pan, shape beef mixture into 8 x 4 inch loaf.
Place meatloaf on upper oven rack; place veggies on rack below. Bake 55 minutes to medium doneness for beef (160 degrees) doneness for turkey (170 degrees), until no pinkness in center and juices show no pink color and vegetables are tender.
Let meatloaf stand 5 minutes before slicing. serve with veggies.
Serving Suggestions
Makes a great special night meal without too much fuss. Bob gets this on his birthday!
