In a large skillet, combine fruit, the 1/2 to 3/4 cup sugar, and water. Bring to boiling, reduce heat. Cover; simmer 10 minutes. Combine apple juice and cornstarch; add to fruit. Cook and stir until thickened and bubbly. Transer mixture to a 2 1/2 quart square baking dish; keep warm.
Meanwhile, combine flour, the 1/4 cup sugar, baking powder, soda, and salt. Cut in butter until mixture resemble coarse crumbs. Combine buttermilk and extract; add to flour mixture, stirring until dry ingredients are moistened.
Drop by spoonfuls onto hot fruit, forming 8 mounds; sprinkle with sugar. Bake in a 400°F oven 20 min or ntil golden brown.
