Wash the cauliflower and remove side leafy pieces. Slice the bottom so the whole head can sit flat on a pan. Add a cup or two of water so there’s about ˝ inch of water in the pan. Bring water to a boil, cover and reduce heat to medium. Steam whole head of cauliflower until barely done (approximately 15 minutes). Keep an eye on the water level to ensure it doesn’t boil away and start to burn. Cool slightly.
