     Pineapple-Pork Stir-Fry

Ingredients
15 ounces center-cut boneless pork, cut into
2-by-1/4-inch strips
2 tbsp cornstarch
1/4 tsp ground ginger
1/8 tsp ground cloves
1 tbsp plus 1 tsp vegetable oil
2 cups fresh snow peas
1 medium red bell pepper, cut into strips
3 quarter-size slices fresh ginger, minced
 
3 cloves garlic, minced
2 cups drained canned pineapple chunks
in unsweetened fruit juice (1/3 c juce reserved)
2 tbsp reduced-sodium soy sauce
2 tsp light brown sugar

Instructions
Preheat the broiler. On a broiler rack, broil the pork 4 inches from the heat for 4 minutes, turning once. Remove and cool.
In a plastic bag, combine the cornstarch, ground ginger, and cloves. Add the pork strips to the mixture and toss to coat.
In a large nonstick skillet or wok, over high heat, warm the oil until almost smoking. Add the snow peas, bell pepper, fresh ginger, and garlic, and stir-fry for 1 minute. Add the pork and stir-fry for 2 minutes.
Add the pineapple chunks, reserved juice, soy sauce, and brown sugar, and cook until the pork is slightly browned and cooked through, about 1 minute.
