     Chilled Beans with Blue Cheese Dressing

Ingredients
3/4 lb fresh green beans
1/2 cup water
1/2 tsp salt
1/2 tsp sugar
1 tsp salad herbs
Sliced toasted almonds
Blue Cheese Dressing
 
1 cup sour cream
1 cup mayonnaise
1 tbsp lemon juice
1 tsp Dijon-style mustard
1 pkg (4 oz) blue cheese, crumbled
Combine sour cream, mayonnaise, lemon juice and
mustard. Fold in the blue cheese.

Instructions
Remove tips and stem ends from green beans. Cut beans into halves if they are longer than 4 inches. Wash in cold water; drain.
Put beans into saucepan; add water, salt, sugar, and herbs. Cover and heat to boiling. Cook 8-10 minutes or just until beans are tender-crisp. If you use frozen green beans, cook according to directions on package, but reduce cooking time by 2 minutes. Drain and chill
Drain. Chill in cold water to cool quickly. Place drained beans into serving dish; cover and chill for 1/2 hour or longer.
To serve, spoon dressing over beans. Garnish with sliced toasted almonds.
