     Peachy Rice Pudding

Ingredients
1 cup cooked rice
1/2 cup skim milk
1/2 cup, chopped fresh or frozen peaches, thawed
2 egg whites
1 egg
2 tbsp sugar
1 tbsp cornstarch
1 tbsp reduces-calorie margarine or butter
1/4 tsp nutmeg
 
1/8 tsp salt

Instructions
Microwave Directions- In medium microwave-safe bowl, combine all ingredients; mix well. Microwave on high for 5 to 7 minutes until mixture is set, stirring twice during cooking.
Serve warm. 5 (1/2 cup) servings.
