1 1/4 cups brown sugar

1 cup buttermilk
|
|
1 egg
|

1 1/2 cups rhubarb, cut into pieces

1 tsp vanilla

1/8 cup nuts
|

2 1/2 cups flour
|

1 tsp baking powder
|
|
1 tsp baking soda
|
|

1 tsp butter
|
|
1 tsp cinnamon
|
|
1/2 cup sugar
|

1/2 tsp salt

Instructions |

|
Beat first six ingredients together. Mix flour, baking powder, baking soda and salt and mix wit first mixture. Spoon into cupcake tins.
|

For topping, mix butter, cinnamon and sugar and sprinkle on muffins.
Bake at 375 degrees for 18-20 minutes.
Makes 14 muffins.
