     Banana Muffins

Ingredients
1/3 cup milk
¼ cup vegetable oil
1 large egg
2 cups all-purpose flour
½ cup packed brown sugar
2 teaspoons baking powder
½ teaspoon salt
2 medium bananas (very ripe) smashed
 

Instructions
1. Heat oven to 400 degrees. Place a paper liner in each muffin cup
2. In a large bowl, beat milk, mashed bananas, oil and egg with a wire whisk until well mixed. Using a large spoon, stir together flour, brown sugar, baking powder and salt-add to liquid ingredients and mix until flour is moistened (batter will be lumpy). Divide batter evenly among muffin cups.
3. Bake20 to 25 minutes or until golden brown. Remove and place on a wire rack to cool.
Serving Suggestions
If you can find them buy the discounted extra ripe bananas at the grocery store and you will save a lot of money!
