Preheat oven to 350 degrees.
Peel and slice apples. Sprinkle with cinnamon and (5 T) sugar. Mix well and let sit while making the cake.
Mix together (2 1/4 C) sugar, shortening, eggs, orange juice, flour, salt, baking powder, and vanilla.
Grease tube pan well. Spread in layers batter, apples, batter, apples, etc. ( 3 layers batter, 2 layers apples)
Bake at 350 degrees for 1 hour and 45 minutes.
