Cook chicken breasts in simmering chicken broth until done,about
20 minutes. Remove and let cool. Cut into bite-size chunks.
Sauce onion, bell pepper, and garlic in olive oil and add to broth.
Saute onion and garlic in olive oil until tender and add to broth.
Add the tomatoes, salsa, and basil. Bring to a boil and add
tortellini. Simmer on low, uncovered for 15 minutes. Stir in
chicken and bell pepper. Cover and turn off heat and let stand
another 15 minutes. Ladle into bowels and top with parmesan
cheese.
