Set oven to 400 degrees. Line baking sheet with foil. Place carrots
in a large bowl and drizzle with olive oil. Season generously with
salt and pepper; toss well to coat.
Spread the carrots on the baking sheet and bake for 20 minutes.
Remove and toss the carrots, then return to oven for about 15
minutes longer or until tender.
Meanwhile, melt the butter in a small saucepan, then whisk in the
honey and balsamic vinegar. Drizzle the honey glaze over the
carrots and serve.
