     Linguine Puttanesca

Ingredients
1/4 c olive oil
2 large cloves of garlic, diced
2 cups chopped canned plum tomatoes (or any tom)
1/2 c chicken broth (I use no fat, low salt)
salt
1 pound dry linguine or spaghetti is okay too
1/2 c minced pitted calamara olives-- black olives ok and cheaper
2 T chopped capers - only if you like them
1/4 c chopped fresh Italian or flat parsely
 
1/8 t dried red pepper flakes

Instructions
The sauce- In a sauce pan large enough to hold the sauce and the pasta,on medium heat, add the oil. Add the garlic and cook for a few seconds or just until it begins to turn golden. Add the tomatoes and chicken broth and simmer 2-3 minutes just to heat through. Remove from the heat but just keep the sauce in the pan.
Pasta- While the sauce is cooking, bring about 4 qts of salted water to a boil. Add the noodles and cook for about 8 minutes or until tender.
Drain the noodles and dump them into the sauce pan that has been off the heat. Toss the noodles with the tomato sauces, black olives, capers, parsley and season to taste with salt the those yummy red pepper flakes.
