Preheat oven to 425 degrees. Core 8 plum tomatoes (about 1 1/2 lbs); halve each lengthwise. Transfer to a rimmed baking sheet; toss with olive oil, thyme, salt and pepper until coated.
Arrange in a single layer, cut sides up. Bake until soft, about 30 mins.
