Tofu (soft, one carton)

Garlic (several tablespoons)

Peanut/other nut butter (approx. 2 tablespoons)

Soy sauce (2 tablespoons)
|
|
Red pepper flakes
|
|
Chopped dried apricots (1/4 cup, optional)
|
|
Onion (1) chopped
|
|
Olive Oil (3 tablespoons)
|
|
|
|
Ground mustard seed (1 teaspoon)
|
|
Crushed peanuts or other nuts (1/4 cup)
|

Instructions |
|
|
In large pan, stir-fry green beans in olive oil with garlic and onions. Add red pepper flakes to taste.
|

|
Once beans are soft (not mushy) add tofu to pan.
|
|
|
Add nut butter, mustard seed, nuts, and apricots.
|
|
|
Cook until hot and beans are at desired texture.
