     Purple Puree

Ingredients
3 cups of raw baby spinach
1 1/2 cups of fresh or frozen blueberries
1 teaspoon of lemon juice
3-4 tablespoons of water
 

Instructions
Wash spinach. Bring spinach to boil in a medium pot. Turn heat to low and allow to simmer for about 10 minutes. If using frozen blueberries, quickly rinse them under cold water to thaw a little, and then drain.
Fill the bowl of your food processor with the blueberries and cooked spinach, alond with the lemon juice and water. Puree on high until smooth.
This will keep in the fridge for 2 days or you can freeze.

This puree is great in total tacos recipe!
