     Cilantro Salsa

Ingredients
4 -5 large tomatoes
Half a large onion (Vidalia makes a nice flavor!)
1 pepper -can use yellow or red
Bushel of fresh cilantro
3 Tbsp of lemon juice
2 Tbsp of salt
 

Instructions
Cut up pepper and onion and place in food processor. Process until finely chopped (NOT PUREE!) Pour into large mixing bowl
Quarter tomatoes and then drain and deseed them as best as you can. Process them also, but make sure you don't puree them! Pour into bowl.
Add salt and lemon juice and mix well.
Wash cilantro well. Get rid of dead looking pieces and then remove as much of the stems as you can. Place half of the bushel in the processor and process. (Sometimes I place a bit of the salsa mix to the processor to keep the cilantro from sticking to the processor and actually allowing the cilantro to be processed) Add to bowl and mix throughly. You can taste and decide if you want to add more cilantro or not!
Serving Suggestions
Great with tacos or quesodillas! Add to spanish rice or pinto beans for a kick!
