Heat oil in a medium saucepan over medium-high to 350 degrees. Slice potatoes into French fries and rince with cool water to remove excess starch.
Carefullly slide half the fries into the oil one at a time. They mus be submerged indiviually or they will stick together. Fry until they just start to turn golden.
Remove and drain on paper towels. Repeat with the second half of the fries. While they are still hot, top with salt to best absorb the flavor.
