     Vegetarian Fried Rice

Ingredients
1 Tbsp canola oil
3 cups cooked brown rice
2 Tbsp soy sauce
1/2 cup diced celery
1/2 cup water chestnuts, sliced in matchsticks
3 ounces frozen peas and carrots mix
 

Instructions
Cook peas & carrots. Put oil in a non-stick skillet. Place over medium heat until hot. Add rice, stir fry 3-4 minutes. Stir in vegetables and fry for 3 more minutes or until celery is tender. Add soy sauce and toss well before serving.
