Cut chicken breast in half by cutting through while flat so you have large flat pieces 1/4 inch thick. Spread each piece with 1 teaspoon pesto and roll up and secure each roll with a toothpick.

Dip pesto chicken roll in flour mixture, then egg mixture, then bread crumb. You should have 8 pieces.

|
Heat 1/2 inch of oil over medium heat in a frying pan. Add breaded chicken pieces, cook for 5 minutes on one side then turn over and cook other side until golden, 8 to 10 minutes total.

|
Put chicken pieces in a 375 degree oven on a cookie sheet or baking pan for 15 to 20 minutes.

Suggestions |

Serve with seasoned rice and a vegetable like broccoli or green beans. Rookies can use chicken Rice-a-Roni as a side dish.
