     Red Chile Marinated Grilled Chicken

Preptime   30 min - marinate

Ingredients
3 lbs bone in skin on chicken (thighs, legs, etc)
Salt
1 1/4 cup Mexican red chile sauce (homemade)
1 T olive oil
4 T white vinegar
1/2 t ground cloves
1/2 t ground allspice
1 t cinnamon
1/4 t ground cumin
 
pinch of oregano
pepper

Instructions
Heat oil on medium heat. Add chile sauce, vinegar, cloves, allspice, cinnamon, cumin, black pepper, and oregano. Bring to a simmer and let simmer for 5 min. Remove from heat and let cool.
Sprinkle salt over all the chicken. Add the marinade to the chicken pieces in a bag and marinate over night.
Remove the chicken from the refrigerator. Preheat grill , cook for 25 min until internal temp of 165.
Serving Suggestions
Avocado slices, thinly sliced lettuce, cabbage, radishes, cilanto
