     Gluten-Free Waffles

4 eggs, separated
1/2 tsp vanilla
1/4 cup vegetable oil
1 cup milk or soy milk
1/2 cup rice flour
1/4 cup potato starch
1/4 cup tapioca starch/flour
3/4 tsp xanthan gum
1/2 tsp salt

Separate egg yolks from egg whites. Beat egg yolks until light. Add remaining wet ingredients except egg whites. Mix well. Add dry ingredients and mix well. Beat egg whites until fluffy and add to the other mixture blending well.
Preheat waffle iron and coat with cooking spray. Follow waffle iron instructions.
