     Lemon Parsley Chicken

Ingredients
4 boneless, skinless chicken breast halves, cleaned
1/4 tsp salt
1/4 tsp ground black pepper
1/4 cup finely chopped fresh parsley
2 tsp lemon zest
2 tsp olive oil
1 tsp light stick butter
 

Instructions
Place chicken breast halved between 2 sheets of heavy-duty plastic wrap, and pound to 1/4 inch thickness using a meat mallet or small heavy skillet. Sprinkle chicken with salt and pepper.
Combine parsley and lemon zest in a small bowl; toss gently. Press half of parsley mixture evenly onto 1 side of each chicken breast.
Heat a large skillet over medium-high heat. Add oil and butter to pan, and heat until butter melts. Add chicken, herbside down, and cook 4 to 5 minutes or until chicken begins to brown. Top chicken breasts with remaining parsley mixture; turn and cook 4 to 5 more minutes or until done.
Squeeze lemon juice over chicken for more tartness to chicken.
