1 dozen fresh jumbo shrimp, cleaned , deveined and butterflied
Stuffing-
2 slices of bacon fried and crumbled
1 med. onion finely chopped
1 stalk celery finely chopped
1/2 green pepper chopped fine
1 lb. crab meat ( real or immitation)
1 tsp. mustard
1/4 c. mayo
1/4 c. cream cheese
2 tbsp. finely crushed bread crumbs
2 tbsp. lemon juice
butter to taste
Instructions
Preheat oven 400 degrees. Combine milk, eggs into small bowl and mix bread crumbs, paprika and salt in another bowl. Dip shrimp in egg mixture then bread crumbs and set aside.
TO make the stuffing, fry bacon and remove when crisp. and reserve the remaining drippings. Chop finely when cooled. Saute onions, celery and green peppers in bacon drippings. Add remaining ingredients, including the bacon . stir together well.
place shrimp on greased sheet tails up. stuff with mixture till overflowing. baste with butter and bake for 30-40 minutes.
