     Basic Salad Dressing with Variations

Ingredients
1 clove garlic, crushed or minced
1/2 teaspoon dry mustard or dijon mustard
1/4 cup olive oil
1/4 cup vegetable oil
1/4 cup red wine vinegar
2 to 4 tablespoons water
1/2 teaspoon salt
1/4 teaspoon fresh black pepper
 
Variation 1- 2 tablespoons fresh basil, chopped or 1 tsp dry
Variation 2- 2 tablespoons fresh oregano, chopped or 1 tsp dry
Variation 3-1 tablespoon each fresh basil and oregano
Variation 4-Replace vineg.-1/4 c Lemon juice and 2 tablespoons vinegar plus oregano (Greek dressing)
Variation 5- Delete mustard, use lime juice instead of vinegar, add 2 tbsp cilantro and 2 tsp honey
Variation 6- Add chives or finely chopped green onion to any of the above
Variation 7- Leave out garlic and add 2 to 3 tablespoons pesto
Variation 8- Add 1/2 teaspoon lemon zest to any of the above
Variation 9- Replace vin. with 2 tablespoons balsamic vin. and 2 tablespoons orange or lemon juice

Instructions
Mix ingredients in bottle and shake hard. OK to briefly blend in blender to emulsify before adding herbs. If using dry herbs try to mix the day before you need it. If you like your dressing more tart, cut back the water and increase the vinegar.
You can turn any of these recipes into the creamy version by leaving out the oils, cutting back the water to 2 tablespoons, and adding 1/2 cup mayonnaise. Creamy dressings are good when made with the blender.
I use some olive oil and some vegetable oil so that the dressing won't be so hard when you take it out of the refrigerator. If you want to use all olive oil you just have to run a little warm water over the bottle to melt the olive oil after being refrigerated.
For low calorie versions cut the oil back to 3 tablespoons and use a little more water/vinegar/lemon juice/orange juice. You can use 1/4 cup mayo and 1/4 cup greek yogurt for the creamy dressings.
