In a large bowl, mix cranberries, onions, bread cubes, butter, almonds, garlic, red pepper flakes, and egg. Tranfer the mixture into a 9 X 13 baking dish.
Butterfly the chops and place them on top of the mixture in baking dish. Sprinkle with olive oil, salt and pepper, and pour apple juice over all. Cover with foil.
Bake for 45 minutes at 325 deg. Uncover and bake for 15 minutes more or until the internal temperature of the chops reaches 165 deg.
