3 c. flour (1 1/2 c. all purpose, 1 1 /2 c. whole wheat)
1 t. salt
1 t. baking powder
1 t. baking soda
2 t. ground cinnamon
3 eggs
1 c. oil (1/2 c. unsweetened applesauce, 1/2 c. oil)
2 c. sugar
3 t. vanilla extract
2 c. shredded zucchini
1 c. chopped walnuts
Instructions
Grease and flour 2 8x4 bread pans. Preheat oven to
325 degrees.
Sift dry ingredients together and set aside.
Beat eggs, oil, vanilla, and sugar together in a
bowl. Add sifted ingredients and mix well. Stir in
zucchini and nuts until well combined. Pour batter
into prepared pans.
Bake for 50-60 minutes, or until a tester inserted
in the center comes out clean. Cool in pan on rack
for 20 minutes then remove from pan and cool
completely.
