     Kiki’s Zucchini Bread

Ingredients
Best if baked 1 or 2 days ahead of when needed.
3 eggs, beaten
2 c. grated zucchini
1c. sugar
1 Tbs. vanilla
1 c. vegetable oil
3 c. flour
1 tsp. salt
2 tsp. cinnamon
 
¼ tsp. baking powder
1 tsp. baking soda
1 c. chopped pecans or walnuts (optional)

Instructions
Preheat oven to 350 degrees. Combine dry ingredients. Stir together wet ingredients and add to the dry. Add nuts. Pour into large loaf pan and bake for 1 hr. and 20 minutes until top springs back to touch.
