     Yam Neau (Thai Beef Salad)

Ingredients
1 European cucumber, extra thin slices
1 red onion, thin long slices
6 fresh coriander leaves, finely chopped
1 handful of fresh mint, finely chopped
2 garlic cloves, chopped
1 1/2 Tbl sugar
2 Tbl crushed red chili pepper
salt and pepper to taste
3 Tbl fish sauce
 
juice from 2 1/2 lemons
1 Tbl crushed white rice that has been browned
4 lb beef top round roast

Instructions
Preheat oven 350 degrees. Wrap beef roast in foil and cook 2-3 hours. Cut into small, thin slices. Save the juice from cooking to mix in with the vegetables.
Blend cut beef slices with remaining ingredients along with the beef juice.
Serving Suggestions
Serve with steamed rice.
