     Rhubarb Butter

Ingredients
6 cups rhubarb, cut in 1 inch lengths
1/2 cup water
2 1/2 cups sugar
4 drops red food color
 

Instructions
Put rhubarb in blender with a little water. It should make 3 cups pulp. Heat this to a boil and mix in sugar. Cook, stirring constantly until consistency of fruit butter.
Add food color. Ladle into hot jars. Seal. Makes 3 half pints. Recipe can be doubled easily.
